Depends on your budget. For your facilitator, you’re going to want a ‘fairly’ directional mic so that it picks up his voice, but not all the ambient noise going on in the classroom. I say ‘fairly’ because you don’t want it to be TOO directional; otherwise when he turns his head, the audio drops off sharply.

For your classroom, maybe a minimum of 4 ceiling mounted boom mics, basically directional, that you can aim toward each quadrant of the class.

Whatever recorder you use, you’ll want a multi-track device so that each mic goes to a separate track. That way, if a particular class has too much ambient noise going on, it’s not all permanently mixed together with the faciliators voice and can be potted down (volume reduced) when necessary during final mix.

Of course you’ll also need some kind of EQ equipment to compensate for the room’s inadequacies for frequency reproduction. Possibly test equipment, such as a pink noise generator and spectrum analyzer, to properly set your EQ. Just some stuff to consider.
